This book represents some of my best and easiest chocolate cake recipes. The recipes that I have included have been thoroughly tested, tasted and enjoyed. As a homemaker and a Mom, these are cakes that I made with my children; made for my family, friends and colleagues. They were enjoyed at family gatherings, at potlucks and school functions, and even at parties. As a pastry and culinary chef, these recipes were used with confidence and pride. What I have learned as a chef is that many recipes can be simplified and changed to suite any occasion. I have passed on these recipes, tips and techniques to my daughters, my family and my friends, with my colleagues and the amazing student apprentices that I was privileged to work with. And now I want to share them with you! These recipes work. I want you to be the hero when you serve these chocolate cakes.
